Amaranth Upma

Prepared with simple ingredients, follow these easy steps and make the most of your breakfast meal. Ingredients
  • ½ cup amaranth
  • ½ cup finely chopped onion
  • 1 ½ cup water
  • 1/2 cup peas
  • 1/2 cup finely chopped carrot
  • 2 tbsp oil
  • 1 tbsp cashews
  • 1 tbsp peanuts
  • 2 tsp urad dal
  • 2 tsp chana dal
  • ½ tsp finely chopped ginger
  • ½ tsp mustard seeds
  • 1 dried whole red chilli
  • 1 finely chopped green chilli
  • Salt to taste
  • Ghee as required
MethodStep 1: In a pan, start by lightly roasting amaranth. Transfer it to a bowl and keep it aside. In the same pan, add oil, peanuts and cashews. Fry until golden and aromatic. Keep them aside.Step 2: In the same oil, add mustard seeds, along with red chilli, chana dal and urad dal. Fry until the dals become golden. Stir onion, green chillies, curry leaves and ginger. Step 3: Add water and bring it to a rolling boil. Add salt and toasted amaranth. Stir chopped veggies and cook until the rajgira has absorbed all the water and is in general cooked properly.Step 4: Drizzle a spoonful of ghee, roasted peanuts and cashews into the upma. Serve hot with a steaming cup of tea and enjoy!
