Ingredients
For the Chole (Chickpea Curry):
â 1 cup dried chickpeas (soaked overnight) or 2 cups boiled chickpeas
â 2 tablespoons oil
â 1 teaspoon cumin seeds
â 1 large onion, finely chopped
â 2 tomatoes, finely chopped or pureed
â 1 teaspoon ginger-garlic paste
â 1-2 green chilies, slit
â 1 teaspoon coriander powder
â 1 teaspoon cumin powder
â 1 teaspoon red chili powder
â 1 teaspoon garam masala
â 1 teaspoon chole masala
â Salt to taste
â Fresh coriander leaves, chopped
For the Chaat Assembly:
â 4-5 samosas (homemade or store-bought)
â Tamarind chutney
â Green chutney (coriander-mint)
â ½ cup chopped onions
â ½ cup chopped tomatoes
â ½ cup nylon sev (optional)
â Fresh coriander leaves for garnish
â Pomegranate seeds (optional)
â Lemon wedges
Method
Step 1: Prepare the Chole
1. Pressure cook the soaked chickpeas with salt and enough water until soft. If using canned chickpeas, rinse them well and proceed directly to cooking.
2. Heat oil in a pan. Add cumin seeds and let them splutter.
3. Add chopped onions and sauté until golden brown.
4. Stir in ginger-garlic paste and green chilies, cooking for a minute.
5. Add chopped or pureed tomatoes and cook until the oil separates.
6. Mix in coriander powder, cumin powder, red chili powder, chole masala, and salt. Cook for 1-2 minutes.
7. Add boiled chickpeas and 1 cup water. Simmer for 10-15 minutes, mashing a few chickpeas for a thicker consistency. Sprinkle garam masala and fresh coriander before turning off the heat.
Step 2: Assemble the Samosa Chole Chaat
1. Place a samosa (or two) on a serving plate and break it into chunks.
2. Pour a generous amount of hot chole over the samosa pieces.
3. Drizzle tamarind chutney for sweetness and tanginess, and green chutney for a spicy kick.
4. Top with chopped onions, tomatoes, sev, and pomegranate seeds.
5. Garnish with fresh coriander leaves and a squeeze of lemon juice.
